Weihenstephaner Hefeweissbier is a German Hefeweizen or wheat beer brewed in the centuries-old Bavarian tradition using a significant proportion of malted wheat alongside barley malt, and fermented with a distinctive top-fermenting yeast strain that produces the style's signature flavour compounds of banana (isoamyl acetate) and clove (4-vinyl guaiacol). Germany's wheat beer tradition is one of the oldest and most revered in the brewing world, with Weihenstephan — founded in 768 AD — holding the title of the world's oldest operating brewery. Bavarian Hefeweizen is unfiltered, naturally cloudy and richly flavoured, with a soft, rounded mouthfeel and a lively natural carbonation. The nose is aromatic with banana, clove, wheat and subtle citrus, while the palate is smooth, full-bodied and refreshing with a clean finish. Serve at 8-10 degrees in a tall 500ml Weizen glass, slightly chilled.
