Pedro Ximénez (PX) is the ultimate expression of sweet fortified wine — a dark, viscous, intensely sweet Spanish sherry made from sun-dried Pedro Ximénez grapes that concentrate their sugars to extraordinary levels. The result is a syrupy, almost black wine bursting with flavours of raisin, date, fig, coffee, dark chocolate, and molasses — essentially liquid Christmas pudding.
