Maxime Trijol XO Cognac is produced by the Maison Trijol, a family-owned Cognac house based in the town of Saint-Martial-sur-Né in the Grande Champagne cru of the Cognac appellation in France. The house focuses exclusively on Grande Champagne eaux-de-vie, regarded as the highest-quality growing area within Cognac. The XO expression is a blend of Grande Champagne eaux-de-vie aged for a minimum of 10 years in Limousin oak, with older components contributing additional depth and complexity. The Trijol family has been producing Cognac for several generations, maintaining traditional distillation and ageing methods. On the nose, aromas of dried fruit, toasted oak, vanilla and spice develop with characteristic Grande Champagne floral delicacy. The palate is full and rounded, with dried apricot, walnut, dark wood spice and subtle rancio. The finish is long, warm and structured.
