Lark Symphony No. 1 is a landmark release from one of Australia's most celebrated distilleries — the first ever blended malt whisky from the House of Lark, and a proud testament to the extraordinary quality of whisky being produced across Tasmania. Crowned Australia's Best Blended Malt at the World Whiskies Awards in 2022, 2023, and 2024, it represents a bold and creative step forward from Head Distiller and Blender Chris Thomson, who conceived the expression by delving deep into Lark's portfolio of Tasmanian single malts and letting the liquid guide the composition.
The journey began when Thomson discovered a barrel from the Bothwell distillery producing whisky of exceptional tropical character — pineapple, mango, and fresh fruit notes of remarkable intensity. Around this he wove a carefully selected vintage from the Overeem distillery, then added a touch of Lark's signature tawny cask whisky for depth and fortification. The result is a trio of Tasmanian single malts — aged across American oak bourbon, Sherry, and Port casks with an average age of around six years — harmonised into a creamy, oily, and thoroughly vibrant blended malt that is full of life from start to finish. Bottled at 40.2% ABV, non-chill filtered, with no added colour, and presented in Lark's iconic hip flask-style bottle, Symphony No. 1 carries the uncompromised signature style of Lark whisky — a true Tasmanian icon.
Tasting Notes
Pale golden amber in the glass. The nose is luscious and immediately captivating — fresh mango, toasted pineapple, orange, vanilla, and tangerine, with an underlying malty earthiness and hints of honey and bread dough. The palate is rich, creamy, and oily in the most pleasing way — peaches, apricot, more mango, and sweet Tasmanian apples dipped in toffee, with a honeyed mid-palate and a subtle waxy texture that speaks to the quality of the cask selection. The finish is fresh, citrusy, and beautifully balanced — long, poised, and thoroughly satisfying.
Serves Best With
Excellent neat or over a single large ice cube, where its vibrant tropical fruit character can be fully appreciated. Also outstanding in a whisky Highball with chilled sparkling water and a slice of fresh mango or orange. Pairs beautifully with a Tasmanian cheese platter, fresh stone fruit, or light desserts with custard and citrus.
