Lark Classic Cask is where it all began — the flagship expression from the House of Lark, the benchmark of Tasmanian single malt whisky, and the bottle that introduced countless drinkers to the extraordinary potential of Australian whisky. Based on the original recipe of Lark founder and pioneer Bill Lark, whose vision for Tasmanian whisky was born on a trout fishing trip in the Highlands of Tasmania in the early 1990s, Classic Cask is a labour of love steeped in over three decades of heritage, curiosity, and the rebellious spirit that has come to define the House of Lark.

Handcrafted at Lark's Coal Valley Distillery, the spirit is distilled from Tasmanian Franklin barley — approximately half of which is lightly peated using peat from Lark's own Highland bog — and double-distilled in locally crafted copper pot stills before being matured for up to eight years in small 100-litre oak casks. The use of small casks dramatically increases the ratio of wood surface area to liquid volume, accelerating the development of flavour and producing the characteristically heavy, viscous, and richly textured mouthfeel that is the hallmark of Classic Cask. Bottled at 43% ABV, non-chill filtered, and signed by Bill Lark himself as part of the Lark Signature Collection, it is the most awarded expression in the Lark portfolio — home to over 20 international awards including Best in Show by Country at the 2019 London Spirits Competition, Gold at the London Spirits Competition 2019, Silver at the World Whiskies Awards 2019, and Silver at the International Wine and Spirit Competition across 2018, 2019, and 2020. Tasting Notes
Warm golden amber in the glass. The nose is inviting and layered — golden syrup, vanilla, honeycomb, and aniseed, with hints of orange, grapefruit, and digestive biscuit, and a gentle wisp of Tasmanian highland peat drifting through the background. The palate is rich, oily, and mouthcoatingly satisfying — plum pudding, Christmas cake, figs, cinnamon, and nutmeg, with a clean malty fruitiness and a subtle oak complexity that builds beautifully through the mid-palate. The finish is long, warming, and harmonious — sweet, spicy, and savoury elements in perfect balance, fading gracefully with peat smoke and rich malt.

Serves Best With
Best enjoyed neat or with a few drops of still water to open up the full complexity of this benchmark expression. Also excellent over a single large ice cube for a more casual pour, or in a simple Highball with chilled sparkling water. Pairs beautifully with a Tasmanian cheese platter, dark chocolate, dried fruit, or smoked salmon.
