Lark Chinotto Cask II is one of the most inventive and genuinely distinctive limited releases from the House of Lark — a bold second chapter in the Chinotto Cask series that began with the celebrated 2021 original, awarded 95 points at the International Wine and Spirits Competition. Crafted by Head Distiller Chris Thomson at Lark's Cambridge distillery in Tasmania, it is a testament to Lark's ongoing commitment to pushing the boundaries of what Australian whisky can be.
The inspiration is Chinotto — Italy's most beloved sparkling bitter drink, produced from the citrus oils of the myrtle-leaved Chinotto orange trees of sun-kissed Southern Italy. Rather than sourcing Chinotto commercially, Lark crafted their very own Coal Valley Chinotto in-house at the distillery, which was then used to liberally season the whisky casks before filling. The result is a Tasmanian single malt that carries all the romance of a Tuscan summer — bittersweet orange, earthy peat, and a cola-like depth that is unlike anything else in the Australian whisky landscape. Aged with the same love and patience as the original release and bottled at 49% ABV, the Chinotto Cask II is an experimental, oaky, and vibrantly citrus-driven dram that rewards the adventurous and curious drinker in equal measure.
Tasting Notes
Deep amber in the glass. The nose is immediately arresting and unlike any other whisky — thick and rich, with fresh vanilla beans, malted milkshake, sweet earthy peat, lemon zest, and a distinctive wave of bittersweet Chinotto orange and cola. The palate hits sweet and spreads like warm oil — gingerbread, charred citrus, cinnamon, wattle seed, cola, and a grounding earthy peat and toasted barley character that anchors the citrus exuberance beautifully. The finish is long and drying, with sweet peat, oak, coffee, cola, and wattle seed lingering in a deeply satisfying fade.
