Lark Cask Strength is a bold and unapologetic statement from one of Australia's most pioneering and celebrated distilleries — a whisky that takes Lark's beloved Classic Cask single malt to brazen new depths. Distilled, bottled, and labelled by hand in the heart of the Coal River Valley, it is shaped and carved by old-style Lark philosophy: heritage and mastery married with a fearless, pioneering spirit that has defined the House of Lark since Bill Lark founded the distillery in 1992 as the first licensed Tasmanian distillery in over 150 years.
Double-distilled and matured in small casks, the Cask Strength expression is driven by a strong Port cask influence that gives rise to rich, deeply concentrated flavours of dried fruit, butterscotch, and sweet Tasmanian highland peat — the kind of whisky that drinks significantly below its 58% ABV, making it surprisingly approachable for its power. Crowned Liquid Gold three times by Jim Murray's Whisky Bible and awarded Silver at the International Wine and Spirit Competition in both 2018 and 2019, it is a whisky that invites the adventurous drinker to explore Lark at their own preferred strength — add water to discover new dimensions, or sip it straight for the full, uncompromising Tasmanian experience.
Tasting Notes
Rich amber gold in the glass. The nose is immediately captivating — cinnamon, nutmeg, liquorice, and bright orange peel, layered with vanilla, rich butterscotch, and sophisticated oak complexity. The palate is full, oily, and deeply rewarding — intense vanilla and Christmas cake sweetness, jammy figs, dark chocolate, stewed fruits, maple syrup, and a fleeting whisper of Tasmanian highland peat smoke that adds a grounding earthiness. The finish is long, warming, and deeply satisfying — citrus, toffee, spice, maple charcoal, and dried apricot lingering in a slow, immensely pleasurable fade.
Serves Best With
Best enjoyed neat to experience its full cask strength character, or with a splash of still water to open up new layers of complexity — this is a whisky that genuinely rewards exploration at different dilutions. Also outstanding over a single large ice cube. Pairs beautifully with dark chocolate, jammy figs, aged hard cheese, or a quality charcuterie board.
