Jerez Pedro Sherry (Pedro Ximenez) is a richly sweet dessert Sherry from the Jerez DO in southern Spain — crafted from Pedro Ximenez grapes sun-dried on esparto grass mats to concentrate their natural sugars. The result is one of wine's most intensely sweet expressions: ink-black in colour with overwhelming aromas of raisined fig, espresso, dark caramel, and chocolate.
