A perennial favourite and one of the great entry points into Japanese single malt, the Hakushu 12 is Suntory's gently peated, forest-fresh expression from its high-altitude "forest distillery" on the slopes of Mount Kaikomagatake in the Southern Japanese Alps. Built around non-peated malts matured in American oak and sherry casks, then married with a lightly peated component and finished in American oak, it captures everything that makes Hakushu special — crisp green-fruit vibrancy lifted by a delicate, perfectly integrated wisp of smoke. The pure mountain water of the Ojira River, filtered through ancient granite, gives the whisky its signature softness and clarity.
So beloved that Suntory paused its release in 2018 to protect dwindling aged stock, the Hakushu 12 has since returned in tightly allocated quantities and remains highly sought after. It's a refined, supremely drinkable single malt that rewards slow sipping yet stays approachable — equally at home as a connoisseur's dram or a striking introduction for someone discovering Japanese whisky for the first time.
Tasting Notes
The nose is fresh and herbaceous — poached pear, citrus and crushed leafy bracken over jasmine, green tea, candied stone fruit and a gentle waft of forest smoke. The palate is clean and vibrant, with sweet lime, green fruits and candied malt balanced by a zesty citrus lift and a pleasingly oily texture, all underpinned by a delicate peat. The finish is medium length and beautifully balanced, where the smoke gently reasserts itself alongside orange peel, minty coolness and a fine mineral edge.
Serves Best With
Outstanding as a highball — pour 45ml over ice in a tall glass, top with chilled soda water and garnish with mint or a slice of green apple to amplify its crisp, foresty freshness. Equally rewarding neat or with an ice cube or two, which opens the whisky into several different drinks as it dilutes. On the table, it pairs naturally with sushi, sashimi, grilled fish, tempura and fresh herb-driven dishes, where its clean smoke and green-fruit character cut through beautifully.
