Glendalough Pot Still is a genuinely distinctive Irish whiskey produced by Glendalough Distillery, nestled in the Wicklow Mountains just south of Dublin — a region known as the Garden of Ireland. Founded in 2011 by Barry Gallagher and Brian Fagan, Glendalough draws its inspiration from the ancient monastic heritage of the valley, a place where the art of distillation is said to have been practised as far back as the 6th century.
Crafted from a 1:2 mash bill of malted and unmalted Irish barley and triple-distilled in traditional copper pot stills, this whiskey is first matured in ex-bourbon American oak barrels before spending up to twelve months finishing in an extraordinarily rare cask type — virgin Irish oak hogsheads, crafted from sustainably felled 140-year-old trees harvested from the ancient forests surrounding the distillery. Each bottle is numbered and traceable to the individual cask and the specific tree from which it came, making it a genuinely singular expression of Irish terroir. The virgin Irish oak contributes elevated levels of toasted oak and vanilla that beautifully complement and balance the classic spicy, creamy character of pot still whiskey. Non-chill filtered and bottled at 43% ABV, it represents a milestone for Irish whiskey and a proud revival of an almost forgotten tradition.
Tasting Notes
Golden amber in the glass. The nose opens with clean, malty, biscuity aromas, lemongrass, creamy vanilla, and tannic oak, with a wave of cinnamon spice and subtle grassiness. The palate is medium-bodied and pleasingly bold — crystallised ginger, candied citrus, banana custard, maple syrup, and white pepper, giving way to green oak and dried herbs. The finish is oily and surprisingly long, with clove, red berries, warming spice, and a lingering vanilla character.
Serves Best With
Best enjoyed neat or with a small splash of still water to open up the unique Irish oak character. Also excellent over ice for a more casual serve. Pairs well with smoked salmon, mild charcuterie, soft Irish cheeses, or a classic Irish stew.
