Delamain Pale & Dry XO is the signature expression of Delamain & Co, founded in 1762 and based in Jarnac, France. This Cognac is produced exclusively from Grande Champagne eaux-de-vie — the first and most prestigious of the six Cognac crus — and is aged for a minimum of 25 years before blending. As the name suggests, Pale & Dry XO is notable for its particularly pale colour, the result of Delamain's policy of adding no caramel or any colouring agents. The spirit is presented in its natural state, allowing the quality of the oak ageing to speak without artificial enhancement. On the nose, delicate floral notes, dried citrus peel and a subtle hint of rancio are evident. The palate is refined, elegant and dry, with exceptional balance between fruit, oak and spirit. The finish is exceptionally long and complex, characteristic of Grande Champagne Cognac at its finest.
