Chouette Pique-Nique Pétillant Naturel NV is a naturally sparkling wine made using the methode ancestrale, one of the oldest sparkling wine production techniques in the world. The wine is bottled before primary fermentation is complete, allowing fermentation to finish in the bottle and creating a gentle, natural carbonation without the addition of a dosage or cultured yeast. Pet Nat (Petillant Naturel) wines are often unfiltered, resulting in a slightly cloudy appearance and a complex character that reflects the unique personality of the vintage, vineyard and winemaker's philosophy. These wines are produced by some of Australia's most innovative boutique producers and celebrate minimal-intervention winemaking. The palate is lively and textured with a dry, refreshing finish.
