Alipus San Baltazar Mezcal 47.5% 750ml Bottle

Alipús San Baltazar Mezcal is produced in San Baltazar Guelavila in the central valleys of Oaxaca, Mexico. Alipús was established in 1999 as a project to support traditional mezcal producers across different Oaxacan villages, working with small-scale artisan producers to document and preserve traditional production methods. This mezcal is produced from Espadin agave (Agave angustifolia) using fully traditional methods, including underground pit roasting of the agave piñas, open-air wooden vat fermentation and double distillation in copper pot stills. The result is a mezcal of considerable character and complexity at 47.5% ABV. On the nose, the aroma presents roasted agave, smoke, tropical fruit and a gentle earthiness characteristic of San Baltazar Guelavila. The palate is full and expressive, with smoke, cooked agave, dried fruit and mineral notes. The finish is long, smoky and persistent. Bottled in a 750ml format.
