Alipús San Andrés Mezcal is produced in San Andrés Miahuatlán, in the Sola de Vega sub-region of Oaxaca, Mexico. Alipús was established in 1999 as a project to support traditional mezcal producers and their communities in multiple Oaxacan villages, working with small-scale producers to improve distillation methods and facilitate certification for export. This mezcal is produced from mature Espadin agave (Agave angustifolia) using traditional artisan methods: the agave piñas are roasted in underground pit ovens using wood and hot rocks, which imparts the characteristic smoky character of Oaxacan mezcal. The cooked piñas are then crushed, fermented in open wooden vats, and double-distilled in copper or clay pot stills. On the nose, smoke, roasted agave and dried fruit aromas are prominent, with earthy and herbal notes. The palate is full and complex, with smoke, cooked agave, stone fruit and mineral character. The finish is long and smoky. Bottled at 47% ABV in a 750ml format.
