El Jimador is produced from 100% Blue Weber Agave that is slow-roasted in brick ovens and double-distilled before ageing. The Reposado expression is aged for approximately two months in American white oak barrels previously used for bourbon ageing. This period of maturation contributes a light golden colour and adds vanilla, caramel and soft wood character to the natural agave spirit. On the nose, cooked agave, light vanilla and toasted wood aromas are present. The palate is smooth and approachable, with flavours of ripe agave, caramel, vanilla and a gentle spice. The finish is of medium length, clean and warming.
