El Jimador Blanco is produced from 100% Blue Weber Agave that is slow-roasted in brick ovens, fermented with a proprietary yeast strain and double-distilled. The expression is unaged and bottled at 40% ABV to preserve the natural character of the agave. On the nose, fresh agave, citrus, light herbal and pepper notes are characteristic. The palate is clean and well-structured, with crisp agave, citrus and a dry finish. The finish is of medium length, clean and characterised by pure agave.
