Oaxaca is the spiritual home of mezcal, and the Espadin variety accounts for the majority of mezcal production in the state. Following harvest, the agave piñas are slow-roasted in underground pit ovens lined with volcanic rock and fuelled with mesquite and oak wood, a process that imparts the characteristic smokiness associated with mezcal. The cooked agave is then crushed, fermented in open-air vats and distilled. On the nose, semi-sweet smoke, roasted agave, tropical fruit and light floral notes are characteristic. The palate is balanced, with smooth smoke, cooked agave sweetness, earth and spice. The finish is medium-long, smoky and distinctly Oaxacan in character.
